Cool treatsOn hot days, one of the best parts about summer is that you can enjoy a cold drink. What’s not so great are the artificial dyes and processed sugars that come in most of them! This vanilla ice-cream is dairy-free and naturally sweetened. I’m proud to serve it to my family.
Vanilla Ice Cream – The Best Vanilla Ice Cream
I don’t have much of a sweet tooth so you won’t find me making many desserts. My kids occasionally ask for desserts like chocolate ice-cream or peach cobbler. When the desserts are naturally sweetened, full of healthy fats, and minus all the junk, I don’t mind whipping up some recipes.
I’ve come up with several different ice cream recipes over the years. They usually begin with custard and egg yolks to create a creamy texture. The ingredients in most ice-cream recipes include heavy cream or whole milk. While I’m not against dairy from raw, grass-fed cowsNot everyone can tolerate this.
This recipe is based on cream and coconut milk to give it a rich, creamy taste. I find that it doesn’t even need the egg yolks in the ice cream base for creaminess.
Flavoring Vanilla Ice Cream
Vanilla ice cream is made with vanilla (of course!) It’s important to know what type of vanilla you are using. Sometimes I’ll make my own pure vanilla extractSpiced rum, vanilla beans and vanilla bean. Vanilla flavoring from homemade is great in baked goods, but it shines even more in ice-cream.
Even if you don’t want to make your own, there are plenty of good quality organic options now. Be sure to buy the real vanilla and not imitation! Not only do these have ingredients like sugar and caramel coloring, but they don’t taste as good.
Because vanilla is one of the main ingredients in this homemade ice cream, it doesn’t really have other flavors to hide behind. When adding the vanilla extract, you can also add a little vanilla bean paste. It’s completely optional, but it adds another layer of flavor and looks pretty too.
Making Ice Cream at Home Without an Ice Cream Machine
You can have delicious vanilla ice cream even if you don’t have an ice cream machine. This isn’t a no-churn recipe because it doesn’t have the custard base and sugar to keep it soft without churning. It’s important to mix it somehow or you’ll have chunks of ice crystals. This Cuisinart is what I bought Ice cream maker years ago and we’ve put it to good use!

- You can use a food processor to make ice cream without churning. Freeze the ice-cream mix in an a reusable silicone bag. Remove all the air, and then freeze it completely. Then, add the vanilla and the custard to the food processor bowl. Blend until smooth, then store in a container that can be frozen.

It’s creamy vanilla ice-cream without dairy, but it still tastes great! Maple syrup is used to sweeten the ice cream, which is then infused with vanilla flavor.

The ice cream bowl should be placed in the freezer at least 12 hours prior to making the ice-cream mixture.

Blend the cream, maple syrup, and coconut milk in a blender. Blend for 2-3 minutes until foamy.

Pour the ice-cream mixture into the bowl of your ice-cream machine and churn it according to the instructions provided by the manufacturer.

Mix in the vanilla extract by pouring it into the ice cream while it’s churning.

It should take about 35 minutes to get the soft serve consistency. If you’d like a more thick consistency, put the ice-cream into a freezer safe container and freeze it for four hours or until thickened.
