They are my favorite foods to eat in the summer. There are so many different types of salads.Ingredients of the season and (usually) don’t require turning the hot stove on. This healthier version of the chicken fajitas salad can be made at home.
I’ve always had a thing for Mexican and Tex-Mex food. And while I love the restaurant fajita salads, they usually aren’t the healthiest or most frugal option. You can easily customize my homemade version to suit your tastes. If you don’t do dairy, just leave it out. You like spicy food? Add some hot sauce or jalapenos. It’s naturally gluten-free and couldn’t be easier.
Chicken Fajita Salad Ingredients
This dish can be made in a variety of ways, but the base is crisp lettuce, fresh vegetables, and chicken. I love making this on busy summer nights when I’ve been running around with the kids all day. It’s also great for a quick lunch that’s easy enough kids can make it.
This chicken fajita is a tasty salad that features roasted onions and peppers. Sautéing them is an alternative to broiling. For extra crunch you could add some romaine, but I prefer to use a mix of spring greens. The darker greens are more nutritious.

Fajita Seasoning
Fajita seasoning is essential to any fajita-salad! It’s very similar to taco seasoning and they can often be used interchangeably. Fajita seasoning is often available in stores. Acidic components Tenderizes tough meat. Traditional lime juice used in fajitas is also tenderizing.

Use leftover rotisserie or whole chicken, shredded. If you’re feeling really ambitious, try some marinated chicken. The marinade is made from lime juice and olive oil with a few minced garlic cloves. Use 1 lime (juiced, zested), two tablespoons of olive oil (chopped), two cloves of garlic (chopped) and 1/2 teaspoon salt for 1 pound of chicken.
- Pour the marinade onto the chicken breasts.
- Cook the chicken after letting it sit in the refrigerator for 6-8 hrs.

Top a bed of greens with your favorite toppings and fajita-seasoned chicken. It’s a healthy and tasty meal that is quick to prepare.

Combine the chicken in a large pan with 2 teaspoons the fajita spices and 2 tablespoons the olive oil.

Heat the chicken over medium heat and stir frequently until it is heated.

Meanwhile, spread the onion and bell-pepper slices out on a baking pan and add the remaining oil.

Broil the vegetables for 10 minutes, or until they are soft and blackened.

In a bowl, whisk the sourcream, remaining fajita spices, and lime.

Divide the salad greens into two salad bowls.

Add the salsa, seasoned sourcream, and chicken.

Enjoy the food and serve it immediately.
