Chorizo Spanish Rice with Cauliflower Rice

As a child in Texas, Mexican food was my favorite. Although I’ve moved a few times since then, Mexican dishesOur dinner table is often adorned with these dishes. This Spanish rice with chorizo recipe is the perfect side to accompany those tacos.

Spanish Rice vs Mexican rice

The authentic Spanish rice is often colored yellow with saffron. Mexican rice recipes are colored and flavored with cumin and diced tomato. They’re both delicious, but it can get a little confusing when you look up a new recipe online. Spanish rice is often used interchangeably with Mexican rice.

And if you google restaurant style Spanish rice you’ll likely get a recipe that uses tomato paste or sauce, not saffron. There are also recipes that include chili powder, oregano or other spices. It doesn’t matter what you want to call this delicious Spanish rice recipe.

Easy Mexican Rice with Cauliflower

What can’t cauliflower do? This rice dish is made in two different ways. I make mine with cauliflower rice, but I’ve also included directions for how to make it with Jasmine white rice. I prefer white rice to brown rice or long grain rice when I’m making dishes like fried rice. Read more about white rice in this article.

This low-carb cauliflower version adds more vegetables to the meal. The tomato broth and white rice combine well to enhance the flavor of the dish. Follow your family’s preferences.

Spanish rice: how to prepare it

It is delicious to add chorizo. The chorizo adds extra flavor, and it’s also a good source of protein. There are two types of chorizo.

Mexican chorizo uses raw pork and is soft.VinegarIt is a spicy sausage made from chorizo. Spanish chorizo is usually smoked so it’s harder and fattier. Spanish chorizo is also flavored with garlic and smoked-paprika.

Both options have a spicy kick. If your family isn’t a fan of spicy then look for a non-spicy version of chorizo. These are simply spiced with paprika and garlic, but without the hot peppers.

You could even add shredded chicken, black beans, or ground beef if that’s all you have.

This recipe is easy to make and can double as a meal. It’s topped with sourcream, avocados and other toppings. You can also serve it as a dish to go with enchiladas or burritos.

Storing Leftovers

The leftovers are just as delicious. It is best to let the rice and cauliflower sit in the fridge for a couple of days so that the flavors can absorb.

To reheat the rice, place it in a saucepan with some water or chicken broth.Cook at low heat only until warmed. You don’t want to overcook the rice or it will get mushy. Any leftover Spanish rice can be stored in the fridge in an airtight jar.

Ingredients

  • Avocado
  • Lime juice
  • Cilantro
  • Green onions
  • Jalapeno (diced)

Instructions 

  • Cook the chorizo in a large pan over medium heat. Stir and crumble it occasionally until it is almost done.

  • Stir the garlic, onion, and bell pepper for 2-3 minutes.

  • Stir frequently while cooking the cauliflower rice with the tomato sauce, chicken stock, cumin and chili powder.

  • Add toppings to your liking and enjoy!

Notes

If you want to use Jasmine instead of cauliflower rice, then use 2 cups of uncooked rice. Increase the tomato sauce by 1 cup and the stock by 2 cups. Bring to a boiling point, then turn down the heat so that it simmers. Cover and simmer for 25-30 min.
